Fluorocarbon is denser than nylon, roughly twice as heavy as water, so it sinks fast and sits under the surface instead of lying on top where it can spook wary fish. It's also more refractive in water, which means it's much harder for fish to see than standard nylon tippet.
Beyond the stealth factor, fluorocarbon doesn't absorb water like nylon does, so it holds its diameter and strength no matter how long you're on the water. It's more abrasion resistant too, which counts when you're fishing around timber, rock or weed. The tradeoff is less stretch, so your hook sets are more direct and positive.
